California Citrus Ham Salad

Ingredients
- 150 g ham, julienned
- 500 ml mesclun lettuce
- 30 ml pecan halves (optional)
- 0.25 orange, in segments
- 30 ml pomegranate seeds
- 1 dry shallot, minced
- 7 ml Dijon mustard
- 30 ml olive oil
- 15 ml wine vinegar
- 15 ml orange juice
- 15 ml lemon juice

- 15 ml wine vinegar
- 15 ml orange juice
- 15 ml lemon juice

Preparation

- Vinaigrette: In a bowl, combine the shallots and mustard. Add salt and pepper to taste. Whisk in oil gradually. Finish with the vinegar, orange juice and lemon juice. Set aside.
- In a bowl combine the lettuce, ham and pecans.
- Transfer to a salad bowl and dress with the vinaigrette.
- Garnish with the orange segments and pomegranate seeds.
- Serve immediately.
