California Citrus Ham Salad

Vinaigrette: In a bowl, combine the shallots and mustard. Add salt and pepper to taste. Whisk in oil gradually. Finish with the vinegar, orange juice and lemon juice. Set aside.

In a bowl combine the lettuce, ham and pecans.

Transfer to a salad bowl and dress with the vinaigrette.

Garnish with the orange segments and pomegranate seeds.

Serve immediately.
