Bacon and cheese bundles

In a round-bottom bowl, mix the cheese with the pesto, until it achieves a soft and homogeneous texture

Add the bacon and the pepper. Mix well

Cover your working surface with a sheet of parchment paper. Butter lightly

Put a sheet of filo pastry on the parchment paper and baste the entire surface with clarified butter. Repeat the operation until you have 5 sheets on top of each other

Cut the rectangle into 12 equal squares. Place 1 tablespoon of the mix in the centre of each square. Bring the points towards the centre, while pressing firmly so that they stay in place

Put the bundles on a baking sheet lined with parchment paper and brush with melted butter. Remove and refrigerate for at least 15 minutes

Repeat the process with the rest of the filo sheets and the mix

Preheat the oven to 200° C (400° F)

Bake the bundles for 12 – 15 minutes or until they are golden brown

Serve warm
