Turkey Strip Chili

Ingredients

• 2 kg cooked turkey strips, thawed

• 3 large onions, diced

• 6 stalks of celery, finely chopped

• 2 red peppers, diced

• 2 large green peppers, diced

• 500 ml tomato paste

• 2.84 L stewed tomatoes, chopped

• 500 g canned red kidney beans, drained and rinsed

• 500 g canned black beans, drained and rinsed

• 500 g niblets corn

• 85 ml olive oil

• 8 garlic cloves, minced

• 45 ml chili powder

• 30 ml ground cumin

• 30 ml dried oregano

• 15 ml salt

• 15 ml black pepper

• 7.5 ml red pepper flakes

• 250 ml fresh cilantro leaves, chopped finely

• 800 g grated cheddar (optional)
